Light Roast

196–205°C | First crack onset | High acidity, origin clarity
Light roasts preserve the coffee’s natural complexity and terroir, showcasing floral aromatics, fruit-forward acidity, and clean finishes. Ideal for single-origin beans with high elevation, washed or honey processing.

Offered as Roast on Demand (for orders over $99)
Recommended brewing: pour-over, Chemex, Aeropress
Expected cup profiles: lemon zest, white flower, stone fruit, cane sugar

Medium Roast

210–220°C | End of first crack | Balanced structure, caramelization
Our most popular roast level. Medium roasts maintain a balance between the intrinsic flavors of the bean and the development of sugars and Maillard-driven notes during the roast. It offers structure, roundness, and versatility.

  • Organic: organic, soft acidity, clean finish

  • Deep Forest Blend: grapefruit, berry, wine-like acidity

  • Mystica Coffee: blueberry, dark chocolate, floral finish

  • Espresso Supremo: jasmine, lime, transparent clarity

  • Sts. Peter & Paul Blend: brown sugar, medium acidity, toffee

  • JP II Roast: caramelized sugar, round body, soft citrus

  • Benedictine Blend: mild nutty base, honey, structured cup

  • Swiss Water Decaf: organic, no solvent use, cocoa and almond

Flavored Coffees (Medium Roast Base):
Natural flavor oils infused post-roast for a clean base with layered sweetness. Includes:

  • Hazelnut, Cinnamon Hazelnut, Vanilla, Caramel Apple, Irish Cream, Pumpkin Spice, Salted Caramel

Recommended brewing: auto drip, French press, V60, espresso
Cupping score range: 82–86 pts

Dark Roast

225–230+°C | Second crack proximity | Low acidity, high body, roast-driven flavors
Our dark roasts are crafted for those who prefer intensity and body. Roasted just before or into second crack, these coffees exhibit dominant bittersweet chocolate, roasted nuts, smoky notes, and a long, heavy finish. Excellent solubility for espresso.

  • Three Kings (Tepeyac Edition): dark fruit, cinnamon, spiritual depth

  • French Roast: molasses, black licorice, smooth bitterness
