Every lot we roast is scored on the 100-point specialty scale, roasted on demand at origin, and traceable to Guadalupe Farms and the Catholic farming families we buy from directly in Latin America.

Quality

What 84 to 89 points means

Trained cuppers grade coffee on a 100-point scale. Eighty is where specialty coffee begins, and most of the coffee sold in the world is never scored at all. We score every lot and print the number, from our signature coffee at 84 to special lots that reach 89.

Roast levels

How we read a roast: the Agtron scale

Agtron measures how light or dark a roast is by the color of the ground coffee. A higher number is lighter. We publish it so you can pick by taste, not by guesswork.

Process

What the process does to the cup

Washed

Clean and balanced

The fruit is removed before drying. Clarity, chocolate and citrus. Cristo Rey, Tepeyac, Organic Single Origin.

Natural

Dried in the cherry

The bean dries inside the fruit. Wine-like notes, heavier body, more sweetness. Altura, Single Estate Natural, Natural Parainema.

Honey

Part of the fruit stays on

Some mucilage is left during drying. Syrupy sweetness between washed and natural. Single Estate Honey.

Experimental fermentation

Controlled, layered, rare

Fermentation is guided to build aromatic complexity. Supremo Exquisite (Geisha), Mystica (Catuaí).

Guadalupe Farms and the families we buy from

Our coffee grows in the volcanic highlands of Latin America, on Guadalupe Farms and on the farms of Catholic families we know by name. Varieties include Catuaí, Geisha and Parainema, grown between 1,200 and 1,500 meters and picked by hand.

Freshness

Roasted on demand at origin

We are the roaster. Your bag is roasted when your order is placed, not pulled from a warehouse, and shipped close to the roast date. Whole bean keeps its aroma longest; ground is ready for your brewer the moment it arrives.

How to store it

Keep it simple

  • Airtight container, away from light and heat
  • Do not refrigerate or freeze an open bag
  • Buy the amount you drink in two to three weeks
  • Grind right before brewing when you can

Four ways to brew, one rule: weigh the coffee

Drip & the parish coffee pot

About 60 g of medium-ground coffee per liter of water. For a 12-cup pot, 70–75 g. Rinse the filter, keep the water just off the boil.

Pour-over

1:15 to 1:16

Medium-fine grind, 30-second bloom, total brew 2:30–3:30. Full pour-over guide →

French press

Coarse grind, 4 minutes, press slowly. Fuller body, best with Cristo Rey or Three Kings.

Espresso

1:2 in 25–30 s

18 g in, 36 g out. Espresso Supremo is roasted for this; Cristo Rey works for a brighter shot.

Questions about the coffee

Is it 100% Arabica?

Yes. Every coffee we roast is 100% Arabica from our own farm and from the families we buy from directly.

Why do special lots cost more?

They are small harvests, scored 87 to 89 points, picked and processed separately. There is less of each and more work in every bag.

What is Agtron?

A measure of roast color. Higher numbers are lighter roasts. We publish it so you can compare our coffees by roast level.

Whole bean or ground?

Whole bean stays fresh longer; ground is convenient. If you have a grinder, buy whole bean.

How is the decaf made?

With a water process, no chemical solvents, on the same signature coffee.

How long does it stay fresh?

Because we roast on demand, your bag arrives close to the roast date. Stored airtight and away from light, it drinks well for about three weeks after opening.
